According to Associate Professor Dr. Lam Vinh Nien – Head of the Nutrition and Dietetics Department at Ho Chi Minh City University of Medicine and Pharmacy, dietary habits depend on individual preferences; some people prefer dry rice with food, while others only enjoy rice with broth. However, as long as individuals chew their food thoroughly, both dry rice and rice with broth will not harm the stomach.
“Moreover, whether eating dry rice or rice with broth, the digestive system functions normally. Food in the stomach will be mixed, and nutrients will be absorbed,” explained Professor Nien.

Addressing the notion that eating dry rice helps individuals chew better and facilitates quicker nutrient absorption, Professor Nien stated that there is currently no clear evidence indicating that dry rice is better for the stomach.
“We need to understand that the process of digesting food in the stomach is a mechanical mixing process. The primary function of digestion is not the stomach’s role but that of the small intestine. To date, there is no evidence proving that eating rice with broth or dry rice is better for the stomach,” Dr. Nien analyzed.
According to Professor Nien, whether to eat rice with broth or dry rice also depends on the individual’s needs and health status.
Individuals looking to lose weight and ingest less energy should drink a glass of water or have soup before eating rice or opt for rice with broth to help the stomach feel full faster, thereby reducing the amount of food consumed. Eating rice with broth is also suitable for elderly individuals facing chewing and swallowing difficulties.
However, eating rice with broth is not suitable for those suffering from malnutrition. This is because consuming rice with broth may decrease the amount of food ingested. Prolonged periods of this can exacerbate malnutrition.
Dr. Nien noted: “Each individual may be suited to a different eating method. If people find that dry rice makes their stomach uncomfortable, they can switch to eating rice with broth or vice versa.”
Some Tips for Healthy Eating
Experts suggest that during meals, individuals should keep the following points in mind to ensure good health:
Eat slowly and chew well to fully appreciate the flavors of the food and facilitate the coordination and smooth functioning of the digestive organs.
Avoid carbonated drinks during meals as the carbon dioxide in these beverages can increase pressure on the stomach, leading to acute gastric dilation.
If you experience difficulty swallowing when eating dry rice, you can add a little broth or meat juice to make it easier to chew.
Focus on your meal, and avoid talking while eating or doing other activities such as watching TV or reading.
After eating, individuals should sit and rest, avoiding heavy work or excessive activity.
