Mushrooms Rich in Vitamin D |
Initial research findings by American scientists on mushrooms indicate that common and ordinary mushrooms can become a significant source of vitamin D if exposed to ultraviolet rays for a short period after harvesting.
According to the study, an ordinary mushroom can contain up to 869% of the daily required intake of vitamin D after being exposed to ultraviolet light for just 5 minutes. This amount of vitamin D is equivalent to more than 2 tablespoons of cod liver oil, which is considered one of the natural sources of vitamin D. The research shows that the vitamin D content in mushrooms significantly increases when artificial ultraviolet light is applied to growing mushrooms for 3 hours.
