Many diners are hesitant about the milkfish intestines because they resemble worms.
When it comes to Taiwanese cuisine, international travelers cannot overlook world-famous specialties such as dim sum, beef noodles, and bubble tea. However, not all dishes are visually appealing or easy to eat, even for locals. A prime example is stinky tofu and milkfish intestines—foods that can make diners apprehensive just by looking at or smelling them.
Milkfish, known as Chanos chanos, is popular in Taiwan, where it is prized for its tender meat and economic value. In Hawaii, it is called awa, while in Tahiti it is referred to as ava, and in the Philippines, it is known as bangus or the “national fish.” In fact, there is even a museum dedicated to milkfish in a town in Kaohsiung City, Taiwan, which hosts an annual competition related to this fish.

The people of Taiwan not only raise milkfish for their meat but also utilize the intestines. The flesh can be made into meatballs for porridge, pan-fried, or stewed. The intestines can be prepared in various ways, such as frying or in soups. While the intestines are considered tasty, not all diners are brave enough to try them because they look like worms.
Southern Taiwan has the highest number of milkfish farms and is renowned for its dishes made from fish intestines, challenging both local and international diners. As a result, for those who enjoy fish entrails, the fish farms in southern Taiwan are a culinary paradise.

Milkfish intestines are highly perishable, so they must be cleaned immediately after being removed from the fish. Additionally, if stored in the refrigerator, they will deteriorate, so it is best to prepare them as soon as possible.
Not all milkfish intestines are edible. According to Unitas Lifestyle, the fish must be starved for a few days to allow waste to be expelled, making the intestines clean and tasty. The intestines should be thoroughly washed to remove any impurities, boiled for soup, or fried until crispy.
